Recipes like Moms* Used to Make

Toffee Cookies

These are one of the many cookies we make at Christmas.  I had a hard time convincing friends in College that these weren't year-round cookies (especially since I really like them too!).

1/2 lb butter
1 cup brown sugar
1 egg yolk
1 tsp vanilla
2 cups flour

Cream butter and sugar.
Add egg yolk and vanilla and beat well. Add flour.
Spread on jelly roll pan and bake at 350 for 20 minutes, until brown.

Melt 8 oz chocolate and spread evenly on warm dough or sprinkle with chocolate chips and spread when melted.
Sprinkle with 1/2-1 cups ground pecans.
CUT WHILE WARM.
