(Almost) Impossibly Chicken Pot Pie

Impossibly Easy Chicken Pot Pie is a standard recipe on a box of Bisquick (except in England). We make it better, but slightly less easy. (You can find the original recipe on Betty Crocker's website here.)

1or 2 small potatoes
1 2/3 cup frozen mixed vegetables
1 can condensed cream of chicken (or mushroom or celery) soup

1 cup Bisquick
1/2 cup milk
1 egg

1 or 2 chicken breasts, cut into cubes
1/2 onion, chopped
Pinch rosemary
Pinch thyme
Salt and pepper

1) Cook potatoes in the microwave (slightly less time than baking - Don't forget to poke holes in the potato first!). Cut potatoes into cubes.

2) In a medium skillet, brown chicken in oil with onion, rosemary (fresh if you have it), thyme, salt, and pepper. Cook until onions start to brown.

3) Stir together potatoes, vegetables, chicken/onions, and soup in an ungreased casserole dish.

4) Bake 30 minutes at 400 degrees, until the top is golden brown.
