Chocolate Chip Banana Bread
I think I originally found this sort of recipe on the internet
in high school. Each time I've looked it up since, I've found a slight
variation a different page. I'm afraid I don't know where I found the most
recent one - it's handwritten.
It is a very tasty recipe.
I use fresh
grated orange rind and then I just squeeze the juice out of the orange, so that
I don't have to buy a whole carton of juice. I've never made it with dried
orange rind, but I'm sure it would be fine. I don't usually measure the
bananas - it takes 2-4 bananas, depending on the size. I usually just use
however many are left and getting too brown and spotty to eat. I
don't usually measure the chocolate chips either ; you can't really have too
many! :-)Our combination oven/microwave/cooker sometimes takes more time and
sometimes less, so just watch for it to get golden brown and pass the toothpick
test.
2 C. mashed ripe bananas
1 Tbs. grated orange rind
1/3 C. orange juice
3 eggs
1 C. brown sugar
1/3 C. vegetable oil
2 1/2 C. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
nutmeg
cinnamon
1 C. chocolate chips
1) Mix together bananas, orange rind, juice, eggs, sugar, and oil
2) Mix together dry ingredients
3) Stir dry ingredients into the others until well mixed
4) Add nutmeg and cinnamon to taste
5) Add chocolate chips
6) Pour into a greased bread pan (makes 2 small loaves)
7) Bake at 350 degrees for 40-50 minutes
